About US

Terre del Favonio, our organic farm, was founded in 2012, but the idea behind this project has always lived within us.

We love and respect our territory and the natural landscape of Favignana, which remains deeply agricultural in character. We wish to see it protected and enhanced.

From this aspiration comes the creation of our organic farm, born as a response to the gradual abandonment of the fields.

NATURE GUIDES OUR EVERY CHOICE

We practice organic farming with commitment and passion.
We do not use synthetic chemicals, we enrich the soil through green manure made from broad beans and wild plants, and we minimize tillage to protect the natural balance of the ecosystem.

We work to preserve and encourage biodiversity, allowing wild plants to grow freely between crops and along the edges of the fields.

Our organic farm, Terre del Favonio, stretches across several plots in the north-western part of Favignana, covering around 50 hectares. Olive groves, vineyards, and cultivated fields shape the landscape alongside vegetables, aromatic herbs, figs, and prickly pears. We also produce honey from Sicilian black bees and eggs from free-range hens.

Our olive groves extend over 7 hectares and are planted with traditional varieties from the Trapani area: Biancolilla, Nocellara, and Cerasuola. From these olives, we produce organic extra virgin olive oil, cold-pressed in our own mill just hours after harvest to preserve all its nutritional and sensory qualities. Most of the harvest is carried out by hand, with care for both the trees and the fruit.

In our cultivated fields, we grow ancient Sicilian wheat varieties in rotation, including Tumminia, Russello, Perciasacchi, Maiorca, and Margherito. The grains are stone-ground and roller-milled to produce our flours and wholemeal busiate, the traditional pasta of the Trapani area. Every day, we also bake naturally leavened bread and traditional Sicilian baked goods.

Our vineyard overlooks the deep blue sea between Levanzo and Marettimo. Here, among rows shaped by the salty wind, we cultivate native grape varieties such as Grillo, Catarratto, and Frappato. At the foot of Mount Santa Caterina, on small terraces among ancient carob trees, we grow sweet Zibibbo grapes.

A vital part of our work is the collaboration with Sicilian black bees (Apis mellifera sicula). From April to August, across 53 hives on the slopes of Mount Santa Caterina, they produce wildflower, thyme, and thistle honey following the rhythm of the blooms.

Finally, our organic garden reflects our daily relationship with the land. We grow seasonal fruits and vegetables using natural methods and without synthetic chemicals. Every day, nature reminds us of the quiet generosity of this land.
