Our recipes’ ingredients include local raw materials, expert hands, passion, and respect.
The vegetables and aromatic herbs are produced in the kitchen garden of our Terre del Favonio farm and in the kitchen gardens of Favignana.
Organic honey from Sicilian black bees (Apis mellifera Sicula) is produced by our Terre del Favonio farm.
The flour types used in our preparations are all organic flours made from ancient varieties of Sicilian wheat (Tumminia, Russello, Perciasacchi, Maiorca and Margherito) produced by milling the wheat grown in Favignana on our Terre del Favonio farm and by the Valdibella Cooperative in the Sicilian hinterland.
Our wholemeal busiate pasta is produced from the ancient varieties of organic Sicilian wheat (Tumminia, Russello, Perciasacchi, Maiorca and Margherito) cultivated in our Terre del Favonio farm.
Our chickpea flour is produced from organic Sicilian chickpeas.
Our cheeses are classic cheeses from Trapani.
The oil we use in our preparations is organic extra-virgin olive oil, of the Biancolilla, Nocellara and Cerasuola varieties,
produced, extracted, and bottled in Favignana by our Terre del Favonio farm.
The oil we use for frying is sunflower seed or peanut oil.
WE DO NOT USE PALM OIL.
